I have be utilizing this book since the beginning of the LYC. I don’t know if this would be considered journaling. But I have my entire week planned out. I have my meal prep planned. Shopping list, day to day menu. And I write notes of encouragement for myself. So here’s my submission for the Week 2 challenge.

Of course. Pacakge of ground turkey, season as you like, but for me I use Sofrito, Adabo, garlic powder, onion powder, paprika, oregano, parsley, teriyaki sauce, chopped spinach, bread crumb to hold it all together. I don’t measure. But I’d say I use about 2 tablespoons of teriyaki (I don’t use the one with pineapple) I sprinkle enough bread to slightly coat the top of my mixture. I use a nice handful of spinach. Sauté in a small amount of olive oil. Hope you enjoy Queen, it’s one of my favs.
