For breakfast I’ll make a ton of breakfast burritos (spinach wrap with turkey bacon, scrambled egg, hashed brown, shredded cheese… all cooked) and freeze them in vacuum sealed bags. Another breakfast one is egg muffins (literally omelets but baked in a tin like you would muffins)
